Low Carb Whole Grain Pancakes
INGREDIENTS
2 eggs
2 oz cream cheese, cubed
2 tablespoons water
1/2 tablespoon of ground flax seed
2/3 cup coconut flour
1/2 teaspoon baking powder
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon stevia sweetener or (Monk Fruit Sweetener)
1/2 Tablespoon butter
sugar free syrup

DIRECTIONS
- Place the cream cheese in a bowl at room temperature until soften.
- In a large bowl, combine all the ingredients and mix until the mixture is smooth.
- Place a frying pan on medium heat with olive oil.
- Spray or wipe the inside of a heart shaped cookie cutter or pancake mold with cooking spray.
- Place the cookie cutter in the pan and fill with about 1/4 cup of pancake mix.
- Cook until the the pancakes have some bubbles that have burst.
- Remove cookie cutter and gently flip with a spatula.
- Cook until the the other side is lightly browned.
